If you're facing another black belt in your style, then you know everything your opponent is capable of, but you don't know your opponent. When it comes down to that battle it comes to where each opponent is in his state of mind or who strikes first or who is, straight up, the better fighter. It's about who is at their center more and who is quicker. It becomes a true test of skill.

Now, let's say a black belt from ju jutsu takes on a black belt from karate. Each knows their own art, and their own bodies and what their capable of. Again, at this point it becomes a test of skill as to who the better fighter is.
